After harvesting on August 26th, we destemmed 100% of the fruit, which we fermented with native yeasts. The fruit spent a leisurely 14 days going through a gentle primary fermentation. We achieved a delicate extraction of flavor and structure via daily pumpovers. After another week of extended maceration to smooth out this wine, we pressed off of the skins. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThe Nero d'Avola aged in neutral French oak barrels for 8 months before we bottled on June 5th, 2025. This wine aged beautifully in bottle for an additional 14 months before release, allowing it to mature into a beautiful and intriguing glass.
