2024 Paper Planes Nero d'Avola

The 2024 Paper Planes Nero d’Avola comes from the Clayton Vineyard in the Suisun Valley AVA. After harvesting on August 26th, we destemmed 100% of the fruit, which we fermented with native yeasts. The fruit spent a leisurely 14 days going through a gentle primary fermentation. We achieved a delicate extraction of flavor and structure via daily pumpovers. After another week of extended maceration to smooth out this wine, we pressed off of the skins. 

The Nero d'Avola aged in neutral French oak barrels for 8 months before we bottled on June 5th, 2025. This wine aged beautifully in bottle for an additional 14 months before release, allowing it to mature into a beautiful and intriguing glass.
