The 2022 Paper Planes Nero d’Avola comes from the newly planted Clayton Vineyard in the Suisun Valley AVA. After harvesting on September 2nd, we destemmed 100% of the fruit, which we fermented with native yeasts. The fruit spent a leisurely 14 days going through a gentle primary fermentation. We achieved a delicate extraction of flavor and structure via daily pumpovers. After another week of extended maceration to smooth out this wine, we pressed off of the skins using a manual basket press.
After aging in neutral French Oak barrels for 8 months, we blended in ~10% Grenache to complement the beautiful acidity and structure of this wine.. Another two months in barrel so the blend could get cozy before bottling on August 9th, 2023. This wine has been a longtime dream of ours. We both have our roots on the island of Sicily, and the wines of that beautiful place speak to our souls. We love the balance of bright red fruit, brilliant acidity, and surprising complexity. Saluti!
