Hidden Track Grenache is a funky fresh expression of the Grenache varietal that we recommend serving slightly chilled. Only 83 cases produced!
How we made it:
The Grenache grapes were brought in to the winery on a chilly late-September morning. We fermented 50% of the grapes carbonically (meaning we took the whole clusters, put them by hand into a tank, and sealed up the tank to allow the juice to ferment inside the whole berries). Out of the other half, we de-stemmed 50% and left the other 50% whole cluster before co-fermenting. After fermentation, we pressed off the carbonic lot into two barrels. We pressed off the other lot into one puncheon (roughly the size of two barrels). It aged in neutral oak for 7 months before bottling.
